There is a new cafe in town in the mall across the parking lot from Siam Cuisine. It resides where the Little Dipper Diner once was.
As you can see from their sign, it's owned and operated by the Harley's folks.
Welcome to the Borealis Coffee House and Restaurant
It is very clean and classy with artwork everywhere. Throughout this post, I have included pictures of the art and the food we have had there. I would like to include more plates, but it was busy, and people sometimes get rather owley when I try to photograph their food.

| Huevos Divoriados |
On our first visit, I had Huevos Divorciados. Three fried eggs over crispy corn tortillas, topped with Ranchero red salsa, green tomatillo salsa, cotija cheese, and avocado. I added chorizo. Spicy and sabroso.

Vicki wasn't very hungry and just had a cup of baked potato soup.
It was pretty filling and, as you see, served with sourdough toast. I thought I was going to lose some of my breakfast to her, but the soup did the trick. There was much eyeballing of the menu for repeat visits.

The restaurant was again busy, so I didn't ask about any of that; next time.
The entire restaurant was remodeled in a clean manner with lots of light colors to add space. The art and plants are everywhere, taking advantage of the sunny, south-facing windows.
On our next visit, we were pleased to see that a friend of ours who is an evening bartender at another restaurant that we frequent is also now a day server at Borealis. We were both hungry, so he guided us to larger breakfast choices.
Vicki had a Borealis Special Omelet with toast and hash browns. Obviously, made with three eggs, it was a huge endeavor filled with chorizo, reindeer sausage, mushrooms, mozzarella cheese, and topped with a sliced avocado half. The chorizo was especially spicy, so she pulled it out. Maybe they have mild chorizo next time, or substitute more sausage for chorizo.This is a photo through a window in the dining area wall of the artwork in the Borealis Coffee Bar, adjacent to the main dining area. I neglected to get a photo of the bar, but it is ample, and the barista seemed to handle the crowd well. I will be posting bar photos upon a return visit.

At the bottom right of the menu, there are the "Classic Breakfast Plates." Here served with three eggs any style, you construct your own favorite combo. Choose a bread type or a biscuit and gravy. A side from hashbrowns, through a house salad. And protein: bacon, sausage, chicken fried steak, etc., they even offer brisket.
I chose eggs with home fries and brisket with a biscuit and gravy. The fries were frozen cubes that were deep-fried, so I mentioned it to our server, and he immediately offered to replace them with hashbrowns, which were also from frozen but grilled rather than deep-fried.
The over-easy eggs were done perfectly, and the brisket was tasty and tender with delicious broth.
The Borealis is a for sure go-to place for breakfast from 7 am until 3 pm. or an afternoon meal from 3 until 8 pm.
I took a picture of the breakfast and afternoon menus, but they don't come through well, and I don't like it when restaurants do that on Yelp or other online platforms to keep from making a web page or blog site of a quality menu printout. They will be glad to give you both menus to keep at home.
Breakfast offers pancakes, French Toast, Belgian Waffles, omelets, benedicts, morning artisan sandwiches, Mexican-flavored dishes, and make-your-own breakfasts.
The afternoon menu has starters like fried pickles and chicken wings, burgers of all kinds, taco plates, evening artisan sandwiches, salads, soups, protein rice bowls, and big desserts.
I sure will find out who Harley's had do their interior design; it is remarkable. I haven't been to Harley's on the Old Seward in a while. I should stop in and see if they remodeled that location. I hope you make Borealis a regular dining target. When they make a website, I will surely link to it here. Thank you for viewing.
